Chef Biddy...


What Biddy will be making as soon as she gets a new Ice Cream Freezer:

Buttermilk Ice Cream with Grilled Peaches



So, apparently when I am in this mood, I cook ALOT. I actually cooked supper and invited my parents over to eat with me last night. Biddy is apparently smoking crack.

Anywho, supper was phenomenol. I'm not ashamed to say that I rock in the kitchen. Seriously Rock. Last night's menu:
  • Lemon Herb Linguine

  • Italian Grilled Chicken

  • Italian Cut Green Beans

I had totally planned on doing my lil asparagus wraps (asparagus, drizzled in EVOO, wrapped in pancetta, sprinkled with lemon pepper and parmesan cheese then baked) but the damn asparagus had already gone bad...damnitt. So, since the cooking was already in full swing, I rumaged through the 1651684 cans-o-crap and finally found some damn green beans. If anyone needs Busch's baked beans, Tuna, any Cream Of soup, or black eyed peas, please let me know...cause apparently I buy them every other trip to the store...and never use them.

anyway, the linguine was so easy and soooooo good (thank you Paula Deen!). The chicken was a creation of my imagination. I lightly coated a few chicken breasts with my beloved EVOO, sprinkled them with lemon pepper, italian seasoning, regular pepper, and garlic powder, then I threw them in the oven till they were almost done, took them out and finished them on the George Foreman. Normally, I would have just let them finish in the oven, but everything else was going to be ready long before they finished cooking (they were some big ol chicken boobies). The green beans were nothing fancy. I boiled the snot out of them in a pan of water, salt, pepper, and sugar (dangitt, i was fresh out of bacon grease - the best part of my green beans).

My daddy liked the chicken & linguine so much he ate TWO HUGE plates of it. Mom was apparently most impressed by the bread because she kept saying "that bread is soooooo good" as she would go back for another slice. Thanks mom! I baked bought it this morning last week.

Biddy didn't serve desert. Shame on her. Mainly because I didn't decide to cook until I was FUNGRY (yes, I said FUNGRY) and didn't really feel like whipping anything up (I don't do boxed) and since dad is a diabetic anyway, we went desertless. Later, of course, I had a yummy treat all to myself.

Not sure what's on tonight's menu, but i'm in a serious baking mood. So, I'm thinking I'll probably whip out a batch of

  • chocolate coffee cream filled cupcakes (the best damn cupcakes EVER)

  • blueberry cheesecake muffins

  • lemon poppyseed muffins

hmmm what to do for supper...oh wait, i'll just eat cupcakes and ice cold milk. So nutritious.

that sounds delicious! I'm about to go to a restaurant that serves honey and gorgonzola icecream for desert! Be still my heart, honey and blue(ish) cheeses are my favorite foods... I'll report back.
